Weigh from 4 to 10 pounds and have the most intense red coloured flesh, due to their diet of krill and shrimp which are high in natural carotenoid pigments. It has a firm texture and incredibly rich flavour. Sockeye rates second in total fat content with (8.6 grams per 100 grams) and third highest in Omega- 3 fatty acids (1.4 grams per 100 grams).
