Wild Spring Salmon (Chinook)
Harvested in Haida Gwaii (frozen at sea), Barkley Sound and Nootka Sound, our Spring salmon (also called Chinook) is the largest of the Pacific salmon species, with a rich flavour, firm texture, and flesh color ranging from ivory to deep red. It boasts the highest fat content (10.4g/100g) and Omega-3s (2.5g/100g) and is perfect for roasting with whole grain mustard and brandy.
